Fermentation: The grapes were cold-fermented and once the primary fermentation was complete it was bottled using the
Methode Champenoise utilizing a yeast and sugar mixture to induce a secondary fermentation in the bottle. The bottles were aged for 48 months to develop complexity and creamy textures and after completing the riddling process, they were disgorged and a smidgen amount of liqueur was added prior to corking.
